The heart of this blend lies in its Watermelon Co-Fermentation. During the processing phase at the Los Patios station in Colombia, the coffee is fermented alongside fresh watermelon, allowing the organic esters of the fruit to bond with the coffee's cellular structure. When combined with the high-altitude, phosphorus-rich terroir of Kenya’s Kirinyaga County, the result is a cup with an "electric" sweetness and a clean, crystalline finish.

Technical Brewing Protocol
To capture the neon-bright melon notes, we recommend a high-precision pour-over approach. This recipe is designed to maintain high clarity while highlighting the co-fermented sweetness:
- Dose: 13g coffee / 210g water
- Grind: Medium-Fine (Approx. 25 clicks on Comandante C40)
- Water: 93°C (199°F) / Low TDS (approx. 60ppm) for maximum acidity.
- Method: Three-stage pour (70g bloom + two 70g circular pours) with low agitation to preserve the delicate aromatic volatiles.
