High-Definition Terroir: DAK – Cassis [Kenya]
Roasted by DAK Coffee Roasters—known for their precision and bold flavor profiles—this lot from the Karimikui Coffee Factory is a pristine expression of classic Kenyan terroir. Situated in the Kirinyaga area on the volcanic slopes of Mount Kenya, this region traditionally grew tea before pivoting to coffee, making the exceptional quality of these smallholder harvests all the more remarkable.
Traditional Washed Precision
The Karimikui station, part of the Rungeto Farmers' Cooperative Society, processes this coffee using the traditional Kenyan washed method, renowned for producing unparalleled purity and clarity. After hand-sorting and pulping, the cherries are fermented in water tanks and meticulously washed in ceramic-lined channels—an environmental initiative implemented by the cooperative to allow for water recycling. The coffee is then slow-dried on raised African beds to maximize its natural flavor characteristics.
