Jairo Arcila, owner of Santa Monica Farm in the Quindio region, grew this coffee, bringing new vibrant hues to the world of coffee flavours. Jairo, the former dry mill manager at Racafe, has put his passion into growing unique varieties of coffee. The pink bourbon harvested from his farm was processed washed in an experimental way. After picking and depulping the coffee was fermented in an anaerobic environment for 72 hours, retaining the richness of flavour typical of the washed processing, but with the added complexity of the anaerobic process.
