The Producer
Daye Bensa is one of Ethiopia's top specialty exporters and placed second at the 2022 Ethiopia Cup of Excellence. It works directly with smallholder farmers in Hamasho Village, who deliver their cherries to the Asefa Dukamo Station for processing. The 74158 variety, developed by the Jimma Agricultural Research Center, thrives at these high altitudes.
The Process
This lot is Honey processed:
- ๐ Ripe cherry selection โ Cherries are hand-picked and sorted
- ๐ง Pulping โ The skin is removed, but much of the sticky mucilage stays on the bean
- โ๏ธ Drying with mucilage โ The fruit sugars dry onto the bean on raised beds, adding sweetness and body
The Cup
White grapes and nectarine open the cup, followed by fragrant jasmine and a bright yuzu lift. Floral honey sweetness ties everything together. High sweetness, medium acidity and a clean, delicate finish.
