The Process
This lot is an Anaerobic Natural:
- ๐ Ripe cherry selection โ Whole cherries picked at full ripeness
- ๐งช Anaerobic fermentation โ Cherries ferment in sealed, oxygen-limited tanks
- ๐ณ Shade drying โ Dried slowly in the shade with the fruit intact
The slow, shaded drying keeps the fermentation in check, giving a rich, rounded cup rather than a sharp one.
The Cup
Grape soda and dark myrtle-berry liqueur lead with juicy, fizzy fruit. A creamy cashew-butter texture rounds everything out into a long, smooth finish. Funky but balanced โ a great pick for fans of expressive Ethiopian naturals.
