The Producer
Ndimi Factory sits just outside Kerugoya in Kirinyaga, on the slopes of Mount Kenya. It's run by the Inoi Farmers' Cooperative Society and processes cherries from around 540 smallholder members who farm the surrounding hills. Each family grows a mix of Kenya's signature varieties on small plots, and the cherries come together at the factory as a field blend.
The Process
A traditional Kenyan Washed process โ simple, careful and focused on clarity:
- ๐ Hand-sorting โ Underripe and damaged cherries are removed on delivery
- ๐ง Pulping โ The skin and fruit are removed
- ๐ Overnight fermentation โ Breaks down the remaining mucilage
- ๐ง Washing & grading โ Parchment is washed and sorted by density
- โ๏ธ Slow drying โ Dried for 10โ20 days on raised beds
No added fermentation stages or ingredients โ just great raw material and meticulous processing.
The Cup
Rhubarb soda hits first โ tart, sparkling and juicy โ followed by rich blackcurrant and a sweet orange finish. Acidity is bright and lively, the cup is clean and well structured, and it stays refreshing all the way down. A perfect pour-over for anyone who loves vibrant, fruit-forward coffee.
