Silky Way from Amsterdam-based DAK Coffee Roasters is a unique specialty coffee from the Colombian Las Flores farm, from producer Jhoana. The Pink Bourbon variety, subjected to the rare Anaerobic Washed process, produces an exceptionally pure, elegant brew with a bright, fruity character. In the cup: refreshing lemongrass, subtle white blossoms, and crisp green apple — an expressive and sparkling coffee with a creamy body.

The Producer

Las Flores is a farm in Colombia, tended by producer Jhoana — a grower whose dedication to quality and careful varietal selection has yielded one of the more distinctive lots in DAK's lineup. The farm grows the highly sought-after Pink Bourbon variety, a naturally occurring mutation prized in specialty coffee for its exceptional sweetness, complexity, and aromatic clarity.

Pink Bourbon thrives at altitude in Colombia's ideal coffee-growing climate, developing a concentrated and expressive fruit character that responds beautifully to precise processing. Jhoana's meticulous attention at every stage of cultivation and harvest is what makes this lot stand out.

The Process

The Anaerobic Washed process is among the most technically demanding in specialty coffee — combining the clean precision of washed processing with the aromatic amplification of oxygen-free fermentation:

• 🍒 Selective hand-picking — Pink Bourbon cherries harvested at peak ripeness
• 🔒 Anaerobic fermentation — Whole cherries sealed in oxygen-free tanks, intensifying aromatic compounds
• 🔧 Pulping — Outer skin removed after anaerobic fermentation
• 💧 Washing — Thoroughly washed to remove all mucilage, preserving clarity
• ☀️ Raised-bed drying — Dried slowly on raised beds to optimal moisture content

The result is a cup that marries the brightness and cleanliness of a washed coffee with an elevated aromatic intensity — lemongrass, white florals, and green apple brought into sharp, sparkling focus.
