The ripe cherries are sorted, depulped, and mechanically washed without standard tank fermentation, preserving the raw, unadulterated character of the fruit.
The parchment is then dried slowly for 12 days on raised African beds, turned hourly, and shaded during peak afternoon heat to lock in moisture stability. In the cup, this technique yields a remarkably clean, sparkling acidity and an elegant, tea-like body.
