The Process
This lot is an Anaerobic Natural:
- 🍒 Ripe cherry selection — Whole cherries picked at full ripeness
- 🧪 Anaerobic fermentation — Cherries ferment in sealed, oxygen-limited tanks
- 🌳 Shade drying — Dried slowly in the shade with the fruit intact
The slow, shaded drying keeps the fermentation in check, giving a rich, rounded cup rather than a sharp one.
The Cup
Grape soda and dark myrtle-berry liqueur lead with juicy, fizzy fruit. A creamy cashew-butter texture rounds everything out into a long, smooth finish. Funky but balanced — a great pick for fans of expressive Ethiopian naturals.
