🌸 Wild Florals • 🍑 Peach Iced Tea • 🫖 Black Tea
Intro
Delicate, elegant and beautifully tea-like. Darling is one of the most refined Ethiopians DAK has roasted this year — a 2026 lot from Danche Washing Station in Gedeb. A short anaerobic fermentation adds a little extra depth, but the cup stays light and remarkably clean: wild flowers, peach iced tea and a gentle black-tea finish.

The Producer
Danche Washing Station in Gedeb collects cherries from smallholder farmers in the surrounding highlands. It has become one of DAK's go-to stations this season for coffees that are expressive yet exceptionally clean. For this lot, cherries were hand-sorted and floated so only the ripest fruit made it into processing.
The Process
This lot is Anaerobic Washed:
- 🍒 Sorting & floating — Only ripe, dense cherries are selected
- 🔧 Depulping — The skin and fruit are removed
- 🧪 48-hour anaerobic fermentation — In sealed tanks without oxygen
- 💧 Double washing — Washed twice in clean water for clarity
- ☀️ Raised-bed drying — 15–20 days depending on the weather
The controlled fermentation adds a subtle layer of complexity without making the cup heavy or boozy.
The Cup
Wild florals lead on the nose and first sip, followed by a soft, sweet peach iced tea character. The finish is long and tea-like, with a gentle black-tea quality. Light-bodied, bright and juicy — a great choice for pour-over, and fantastic as a Japanese-style iced coffee.
