By utilizing modern fermentation techniques, the producers have pushed the Castillo variety to new limits, resulting in a layered, lively cup with a lighter, tea-like structure.
Advanced Co-Fermentation Processing
The processing of this lot is highly technical. It begins with careful selective harvesting of fully ripe cherries at 1,400 MASL. The cherries undergo 48 hours of controlled oxidation before being hulled and transferred to a closed bioreactor for an additional 48 hours. During this phase, a specific yeast culture is introduced alongside fresh pineapple, lychee, and local aromatic plants. Finally, the coffee is washed, dried in stages under carefully controlled humidity, and rested for a month to stabilize its complex profile.
