The Producer

Sudoku is grown by Yeisson Fabian at Finca El Vergel in the Acevedo region of Colombia's Huila province, at 1,600 MASL. Behind this lot is the Sudus Coffee Project — a Colombian organisation dedicated to the sustainable cultivation and export of specialty coffees, as well as planting flower corridors to actively support biodiversity across the coffee-growing landscape.

Geisha is a variety native to Ethiopia that ranks among the most valuable and sought-after in the world. Cultivating it is challenging and yields are typically low, making each lot a true rarity. In Colombia’s high-altitude conditions, it has the space to develop its exceptionally floral and fruity profile — and Yeisson Fabian’s careful stewardship at El Vergel ensures every cherry reaches its full potential. DAK Coffee Roasters, committed to ethically sourced beans and paying premium prices to farmers, recognised this lot as something worth celebrating.

The Process

Every bean undergoes strict quality control before being processed using the classic Washed method — the ideal choice for Geisha:

• 🔧 Pulping — Outer skin removed before fermentation
• 🧪 Fermentation — Beans fermented to cleanly break down remaining mucilage
• 💧 Washing — Thoroughly washed to remove all residue, preserving cup clarity
• ☀️ Raised-bed drying — Dried slowly to optimal moisture content
