Elevated Purity: Elto Elora [Natural] {Omni}

Sourced from the staggering altitudes of Arbegona, Sidama, the Elto Elora is a testament to the elegance of Ethiopian terroir. At 2200 MASL, the maturation process slows to a crawl, allowing the 74110 and 74112 varietals to develop a dense, complex sugar structure. This lot, produced by Eliyas Dukamo & Atiklit Dejene, represents the pinnacle of traditional natural processing refined through modern quality control.

The Terroir of Arbegona

Arbegona is one of the highest coffee-growing regions in Ethiopia, and this altitude is immediately evident in the cup's crystalline structure. The Natural Process applied here is meticulously managed to avoid over-fermentation, preserving the delicate floral attributes of the Sidama profile while enhancing the weight and sweetness of the fruit. The result is a cup that bridges the gap between the wild intensity of a natural and the refined clarity of a washed coffee.

Sensory Profile

Elto Elora offers a sophisticated, tea-like elegance supported by a deep, stone-fruit sweetness:

  • Aromatics: Fragrant jasmine and sun-dried stone fruits.
  • Primary Notes: Concentrated Dried Fruits and succulent Ripe Peach.
  • Finish: A clean, structured Black Tea finish with a lingering floral honey sweetness.

Technical Specifications

  • Origin: Ethiopia
  • Region: Arbegona, Sidama
  • Producer: Eliyas Dukamo & Atiklit Dejene
  • Varietals: 74112, 74110 (JARC Selections)
  • Altitude: 2200 MASL
  • Process: Natural
  • Roast Profile: Omni (Optimized for high-clarity Filter or modern Espresso)

Technical Brewing Protocol

Because of its high density and altitude, this coffee thrives with a slightly higher extraction temperature to unlock its full sweetness. We recommend a soft-pour filter method to highlight its tea-like structure:

  • Dose: 13.5g coffee / 220g water
  • Grind: Medium (Approx. 24-26 clicks on Comandante C40)
  • Temperature: 94°C – 96°C (201°F – 205°F)
  • Method: A gentle 45g bloom followed by two steady circular pours to maintain thermal stability and encourage a clean, vibrant finish.
