Grown high in the mountains and processed with inoculated yeast, "Blue Iris" shows how quickly Yunnan is becoming one of the most exciting origins in specialty coffee β floral, dense with sweetness and impressively precise.

The Origin
Yunnan, in China's far south-west, produces the vast majority of the country's coffee. For years it was known mostly for commodity-grade Catimor, but a new generation of producers is changing that β focusing on high-altitude farms, careful picking and controlled fermentation to unlock flavours few people associated with the region.
This lot is a great example. Rather than relying on processing tricks to create exotic flavours, it uses fermentation to bring out clarity and floral complexity β letting the terroir and the Catimor variety speak.
The Process
This lot is a Yeast Natural:

- π§ͺ Anaerobic yeast fermentation β Whole cherries ferment in sealed tanks with an inoculated yeast culture
- βοΈ Raised-bed drying β Dried slowly on raised beds for an even, clean finish
The Cup
A clearly aromatic coffee: dried fig and violet on the nose, with blueberry coming through as it cools. Sweetness is dense and syrupy, balanced by a bright, lively acidity and a silky body. A brilliant pick for pour-over, and a fun one to taste side by side with an Ethiopian natural.
